18oz Coconut Milk
18oz Chicken Broth (consider making your own bone broth)
4 stalks of lemon grass
Half a root of Ginger
1 pound of chicken cut into small chunks (raw)
1 cup of mushrooms sliced
2 teaspoons of chili paste
1 tablespoon of Fish Sauce
1 stalk of celery
1 carrot diced
Slice the ginger into 9 slices (whatever the width of the root is- similar to a quarter size). In a saucepan combine the coconut milk, broth, ginger, carrots, full stalk of celery and lemongrass-bring it to a boil. Once boiling add chicken, chili paste, fish sauce, juice from 1 lime squeezed and mushrooms. Reduce the heat and simmer covered for 15 minutes. Chicken should be firm and opaque. Discard celery and serve. Each bowl can be garnished with a piece of lemongrass and cilantro.
Tip- If you are on the gut repair diet, make as above except omit the chili paste and mushrooms.
