5 Cups Spring Mix Lettuce (arugula, baby greens, spinach, cabbage, endive)

Balsamic Dressing (consider homemade option below)

1.2 pounds of flank steak

1 Tbs avocado oil

1 Tbs Garlic minced

5 Tbs of carne asada seasoning (or see below for a carne asada dry rub recipe)

1 cup of jicama

2 Persian cucumbers

1/3 cup of fresh cilantro

Optional- but recommended 2 avocados- diced



See below to prepare the dressing and dry rub if desired- set aside. Chop the spring mix lettuce, cucumbers, cilantro and jicama- add to a large bowl.  Tip: If this is your first time cutting up jicama- use a peeler to peel the hard skin off, then slice into wedges and then dice into small cubes.  The extra jicama can stay in wedges and makes for a great dipping item into guacamole. Take both avocados and slice them in half, remove the pit and then slice and dice the avocado creating chunks and add to the salad mixture.  Set chopped salad aside in the refrigerator as you prepare the meat.  Cut the flank steak into small cubes and season with a carne asada seasoning or create your own with the recipe below.    Add the avocado oil and minced garlic to a fry pan and add the cubed steak.  The steak will be cook fast, approx 7 minutes.  Toss steak in with the salad, dress the salad with balsamic dressing and enjoy!


Carne Asada Dry Rub:

2 Tbs of chili powder

1 Tbs cumin

1 Tbs of onion powder

1 Tbs of Paprika

Salt and Pepper to taste


Balsamic Dressing

Place in food processor:

4 cloves of garlic
¼ C Chopped onion
½ C Balsamic vinegar


2 C Water
1 C Extra virgin olive oil
½ C Avocado oil
¼ C Apple cider vinegar
1 Tbsp Italian Season
¼ tsp Xanthan gum
